The Hands Behind the Harvest

Beneath the oaks of Noojee and the surrounding region, a close-knit community of growers nurture one of nature's most extraordinary ingredients — the French black truffle. The farms participating in the Noojee Truffle Festival are Ashridge Truffles and the Icy Creek Truffle Co. These are family farms, run by people who made a long-term bet on this land, and waited years for it to pay off. Each farm has its own story, its own soil, and its own approach. What they share is a belief that West Gippsland is something special.

Nestled in the foothills of Mt Baw Baw, The Icy Creek Truffle Co. grows chemical-free Black Truffles in the deep volcanic soils of Victoria's unique sub-alpine High Country. Our truffles are found by Milky, our black and white truffle dog, who hunts through every season — snow included — to unearth our subterranean black diamonds. Since 2023 our intensely aromatic Black Truffles have graced the menus of some of Melbourne and the region's most celebrated restaurants and we are proud they've now found their way to you.

Experience the magic of the winter black truffle at Ashridge Truffle Farm. Meet our friendly truffle dogs and follow them into the truffière as they search for these rare delicacies hidden beneath the soil. Afterwards, warm up beside the fireplace in our cosy farm shop, chat with the growers, taste fresh black truffle, and leave with recipe ideas and cooking tips to inspire your own truffle creations at home.

The best way to understand a truffle is to find one yourself. At the Noojee Truffle Festival, you can get up close with the growers, walk the orchards, and watch trained dogs do what they were born to do, lead you straight to something remarkable buried beneath your feet.

Truffles are one of nature's most uncompromising ingredients. They won't grow in the wrong soil, won't tolerate the wrong climate, and can't be coaxed into ripening before their time. In a way, they demand the same respect for place that the best farming always has.

From regenerative soil practices to preserving the biodiversity of their orchards, these farms are built around a simple philosophy, take care of the land, and the land takes care of you.
